Last weekend, I bought red garnet yams at the market and made sweet potato salad for a potluck picnic.
The purple of the skin and the bright orange of the potato made me think of India and so I added curry powder to the dressing. Here’s how I made it:
Curried Sweet Potato Salad
I steamed three large, unpeeled sweet potatoes, about two pounds, until they were tender. I peeled and cut the potatoes into large chunks and added three stalks of celery cut into quarter inch slices, one thinly sliced, unpeeled apple, five thinly sliced scallions and a cup of seedless red grapes, cut in half.
I stirred in a dressing made by combining three quarters of a cup of mayonnaise, one tablespoon of curry powder, a tablespoon of fresh lemon juice and salt and pepper to taste.
Lazy Day Potato Salad
When I want very easy potato salad, I steam a couple of diced, red skinned potatoes and a couple of sliced carrots until tender and then toss them with salad dressing. Vinaigrette is good, Ranch is better and blue cheese is best.
