Fox Grape Jelly Roll

Wild grapes are sour and perhaps the Aesop’s fable, The Fox and the Grapes, is the reason that the proper name for wild grapes is fox grapes.

I hope that the possibility of encountering an animal doesn’t deter you from gathering grapes. I wouldn’t mind seeing a bear, if it were as friendly as the ones Sal and her mother saw. This year, the only animals we encountered as we picked grapes were a pair of birds who weren’t happy about sharing and three sleepy beetles that traveled to our kitchen sink on the vines.

Sponge cake, topped with a layer of jelly and rolled into a spiral is a special treat when both the sponge cake and the jelly are homemade. Here’s how I did it: 

Jelly Roll

I greased the bottom of a ten by fifteen by one-inch pan with butter, lined the pan with parchment paper and then smeared more butter onto the parchment paper and preheated the oven to 375º.

I sifted together three quarters of a cup of cake flour with three quarters of a teaspoon of baking powder and half a teaspoon of salt.

I separated four eggs and used an electric mixer to combine the yolks with three quarters of a cup of sugar. When the egg yolk and sugar mixture was pale yellow, I beat in one teaspoon of vanilla. I added the flour mixture and beat until the batter was smooth. I beat the egg whites until they were stiff and then gently folded them into the batter.

After baking for twelve minutes, the cake was golden and had begun to pull away from the sides of the pan. I used a knife to release the edges of the cake from the pan and immediately turned it out onto a tea towel that had been generously dusted with sifted confectioners’ sugar. I peeled the parchment paper from the cake and then spread a generous layer of jelly onto it. I used the towel to support the cake as I rolled it up.
