For a more casual meal, sweet potato fries are the perfect side dish with a juicy burger.

Not wanting a cauldron of boiling oil in my kitchen. I made oven-fried sweet potatoes. Here’s how I did it:

Sweet Potato Fries

I began by coating a baking sheet with vegetable oil and preheating the oven to 425 degrees.

I combined three tablespoons of apple cider, one tablespoon of vegetable oil, one teaspoon of dry ginger and a pinch of cayenne pepper in a small sauce pan and boiled this mixture for three minutes until it had reduced to a syrup.

I peeled and cut two large sweet potatoes into quarter-inch strips and put them in a bowl with the cider mixture and stirred until the potatoes were coated.

I arranged the coated potatoes in a single layer on the prepared baking sheet and baked the potatoes for 25 minutes.   I sprinked the tender fries with sea salt and served them immediately.
